Baixing Food × Jiangnan University Industry-Academia-Research Collaboration

Baixing Food has established an industry-academia-research partnership with Jiangnan University, focusing on edible mushroom fermentation and extraction processing. The collaboration targets natural nutritional additives, health food ingredients, and natural umami seasoning ingredients. Leveraging Jiangnan University's strengths in food fermentation, flavor chemistry, and functional factor research, together with Baixing's integrated mushroom value chain, deep-processing capabilities, and product development expertise, the team has achieved breakthroughs in targeted mushroom fermentation, high-efficiency extraction, flavor synergy, and stabilization technologies. These advances enable efficient enrichment of active compounds and natural umami from multiple mushroom species.
The partnership has yielded a high-end seasoning, "9 Mushroom Fresh" (Jiugu Xian), extracted from nine types of mushrooms. With its extraction-based process distinct from traditional brewing, it delivers a rich, layered umami profile and stands as a pioneer of extraction technology in the seasoning category. This collaboration enhances the added value of mushrooms, expands applications in natural nutrition, health foods, and clean-label seasoning, and demonstrates Baixing's R&D strength in mushroom deep processing, technological innovation, and product development.
In 1996, Mr. Wu Qiyao founded Zhejiang Baixing Enterprise, based in Qingyuan, Zhejiang-the "birthplace of shiitake mushrooms in the world." Qingyuan is also known as "China's No. 1 Ecological County."
